Okay let's see...
Armor: not a mod, and I haven't tested it with Constance, but I've found that an exquisite ring or amulet enchanted with 24 seconds of 100 point Sanctuary is quite effective, even against a lot of Solstheim enemies. Or for a cool armor look, an item that summons a full set of bound armor when activated.
(For easier armor management with Julan and Shani I started using the permanent version of this, a Daedric tower shield enchanted to perma-conjure most of a bound armor suit, a bound bow, and a bound dagger. This way I had only one item per companion to repair, instead of a dozen. Plus, if I'm reading the stats correctly, full bound armor is comparable to glass even without greaves and pauldrons. Oh and you could also divide the bound pieces up among e.g. shirt/pants/robe, then you wouldn't even have to repair the tower shield.)
Stable mods: if you're using OpenMW, I've found the following a good for graphics stuff: - Morrowind Enhanced Textures (https://www.nexusmods.com/morrowind/mods/46221) - Normal Maps for Everything (https://www.nexusmods.com/morrowind/mods/45341) - Skies .IV (https://www.nexusmods.com/morrowind/mods/43311) - Personally I love Aesthesia Groundcover Reworked (https://www.nexusmods.com/morrowind/mods/49144), but even as IME the least graphics intensive groundcover, folks with older video cards or IGPUs might need to tweak the settings a bit. So you might wanna skip this one depending. - For awesome clothing, Westly's FCOT is definitely my fave. Hard to find though, as the Fliggerty download site is broken almost all the time. If you can't find it I can upload a copy. Be warned also that enchantment ratings don't really correlate with how cool an outfit looks, though I think the Robes of Elsewyr provide a good balance.

Sanctuary is so good it's almost a cheat. I create a complete suit of clothing - hat, shirt, belt, pants, shoes, robe, gloves, rings, amulet - each with CE sanctuary spell; this gives around 97% if I remember correctly, then a small spell for the remainder. Sanctuary is essentially a dodge ability, so with 100% nothing can hit you; but... it is ineffective against damage which cannot be dodged, so don't try to walk over lava.
Invisibility is also good, but is lost if you do anything - use a spell or weapon, open anything - but through use of a slight "cheat" becomes a viable defence. My pure mage character has no strength, no armor or weapons skills, relying solely on magic. Touch spells are much more powerful than ranged but of course you must get close enough to use them, spells to absorb and drain health 10-15 points for 10-20 seconds are enough to kill most creatures but will require nearly all the magicka of even a powerful mage, so you only get one shot. So equip a ring of invisibility, walk up behind the opponent, cast the spell on them, immediately open the inventory (this pauses the game), remove the ring and put it back on, invisibility is reset, close the inventory, stand and watch while the enemy runs around seeking you as his health drains away. (I can't swear to this, experiential evidence only, but it seems ascended sleepers can detect you even with chameleon or invisibility.)
My other favorite items are a "rocket belt", a few points of CE levitate, especially useful when attacked by hordes; and a "scuba belt" - CE water breathing, swift swim, and night eye. I use belts for these since you'll never need both at the same time.
